2021 Cabernet Sauvignon Estate
Tasting Notes -
This vintage is the first to include fruit from our vineyard's north block (Clone 30 Cabernet vines replanted from the 2017 fire) and a small blend of estate grown Cabernet Franc. You should find that both provide added character and dimension.
The aromas leap out of the bottle - black currant, blackberry, and plum give way to hints of lavender. While this three clone blend is structured for 15-20 years in the cellar, it's ready to open and enjoy now. Black currant and dark plum flavors are seamlessly layered with dark chocolate and dark spice notes. The finish is long and silky. A classic Napa Cabernet experience!
As with other Rockmere vintages, the 2021 Cabernet pairs beautifully with steak (ribeye and New York strip in particular), lamb, and duck.
Especially during its first few years, we suggest decanting or opening several hours beforehand.
